Born in 1977 in Seville, Juan Manuel Díaz Romero discovered his calling in the 1990s — the ancient art of carving Jamón Ibérico de Bellota. What began as a young man’s passion for Spanish culinary tradition evolved into a lifelong pursuit of perfection.
For over three decades, he has performed on the world stage — from exclusive events in Europe and North America to masterclasses in China and South Korea. As an accredited trainer for over 15 years, he has shaped the next generation of cortadores across continents.
